Silky Corn and Chicken Soup

Silky Corn and Chicken Soup is a comforting, nutrient-rich dish combining tender chicken, sweet corn, and hearty vegetables in a flavorful broth. For a Serving Size of Two:

Ingredients:

  • 200 grams diced boneless chicken breast
  • 150 grams sweet corn kernels
  • 50 grams diced carrots
  • 50 grams diced celery
  • 1 small egg, beaten (optional for texture)
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 500 ml chicken stock or water
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon white pepper powder
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 tablespoon chopped spring onions, for garnish

Procedure:

  • Heat olive oil in a pot over medium heat. Add minced garlic and sauté until fragrant. Add diced chicken and cook until it turns white and is slightly golden.
  • Add diced carrots, celery, and corn kernels. Sauté for 3–4 minutes.
  • Pour in the chicken stock and bring to a boil. Reduce heat and simmer for 10–12 minutes until vegetables are tender.
  • Stir in the cornstarch slurry, cook for 2–3 minutes, and allow the soup to thicken slightly.
  • If using, slowly drizzle the beaten egg into the soup while stirring to create silky strands.
  • Add salt and white pepper powder. Adjust seasoning to taste.
  • Garnish with chopped spring onions and serve warm.
