Silky Corn and Chicken Soup

Silky Corn and Chicken Soup is a comforting, nutrient-rich dish combining tender chicken, sweet corn, and hearty vegetables in a flavorful broth. The optional addition of egg lends a silky texture, making this soup a perfect starter or light meal. Its balance of flavors and wholesome ingredients makes it a go-to recipe for cozy nights or quick lunches.
For a Serving Size of Two:
Ingredients:
- 200 grams diced boneless chicken breast
- 150 grams sweet corn kernels
- 50 grams diced carrots
- 50 grams diced celery
- 1 small egg, beaten (optional for texture)
- 1 teaspoon minced garlic
- 1 tablespoon olive oil
- 500 ml chicken stock or water
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon white pepper powder
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 1 tablespoon chopped spring onions, for garnish
Procedure:
- Heat olive oil in a pot over medium heat. Add minced garlic and sauté until fragrant. Add diced chicken and cook until it turns white and is slightly golden.
- Add diced carrots, celery, and corn kernels. Sauté for 3–4 minutes.
- Pour in the chicken stock and bring to a boil. Reduce heat and simmer for 10–12 minutes until vegetables are tender.
- Stir in the cornstarch slurry, cook for 2–3 minutes, and allow the soup to thicken slightly.
- If using, slowly drizzle the beaten egg into the soup while stirring to create silky strands.
- Add salt and white pepper powder. Adjust seasoning to taste.
- Garnish with chopped spring onions and serve warm.
