Veggie Jowar Chilla

For a Serving Size of Two:
Ingredients:
- 80 grams jowar flour
- 50 grams finely chopped onion
- 50 grams finely chopped bell pepper
- 50 grams grated carrot
- 30 grams finely chopped spinach
- 1 – 2 finely chopped green chilies
- 1 teaspoon grated ginger
- Salt (to taste)
- 1 teaspoon cumin powder
- 1 teaspoon sesame oil
- 100 ml water (adjust for desired batter consistency)
- Fresh coriander leaves for garnish
Procedure:
- In a mixing bowl, combine the jowar flour, chopped onion, bell pepper, grated carrot, chopped spinach, green chili, grated ginger, salt, and cumin powder. Mix well.
- Gradually add water to the mixture, stirring to form a smooth batter. The consistency should be similar to pancake batter; adjust the water as needed.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with a small amount of oil.
- Pour a ladleful of the batter onto the skillet, spreading it into a circle about 1/4 inch thick. Cook for 2-3 minutes until the edges start to lift and the bottom is golden brown.
- Flip the chilla carefully and cook the other side for another 2-3 minutes until golden brown and cooked through. Repeat with the remaining batter, adding oil as needed.
- Garnish with fresh coriander leaves if desired. Serve warm with yogurt or chutney on the side.
