Veggie Jowar Chilla

Veggie Jowar Chilla is a nutritious and gluten-free Indian pancake that combines the goodness of jowar flour with a medley of colorful vegetables. This chilla is quick to prepare and makes for a wholesome breakfast or snack option. Packed with fiber and essential nutrients, it’s a delicious way to incorporate more vegetables into your diet while enjoying a tasty meal.

For a Serving Size of Two:

Ingredients:

  • 80 grams jowar flour
  • 50 grams finely chopped onion
  • 50 grams finely chopped bell pepper
  • 50 grams grated carrot
  • 30 grams finely chopped spinach
  • 1 – 2 finely chopped  green chilies
  • 1 teaspoon grated ginger
  • Salt (to taste)
  • 1 teaspoon cumin powder
  • 1 teaspoon sesame oil
  • 100 ml water (adjust for desired batter consistency)
  • Fresh coriander leaves for garnish

Procedure:

  • In a mixing bowl, combine the jowar flour, chopped onion, bell pepper, grated carrot, chopped spinach, green chili, grated ginger, salt, and cumin powder. Mix well.
  • Gradually add water to the mixture, stirring to form a smooth batter. The consistency should be similar to pancake batter; adjust the water as needed.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with a small amount of oil.
  • Pour a ladleful of the batter onto the skillet, spreading it into a circle about 1/4 inch thick. Cook for 2-3 minutes until the edges start to lift and the bottom is golden brown.
  • Flip the chilla carefully and cook the other side for another 2-3 minutes until golden brown and cooked through. Repeat with the remaining batter, adding oil as needed.
  • Garnish with fresh coriander leaves if desired. Serve warm with yogurt or chutney on the side.
