The Crunchy Salad is a delightful mix of fresh vegetables that offers an explosion of colors, textures, and flavors in every bite. Each component, from the crisp cucumbers to the vibrant bell peppers and the peppery radishes, contributes to a refreshing and satisfying dish. This salad can be enjoyed as a light meal on its own or as a side dish to complement a variety of main courses.
For a Serving Size of Two:
Ingredients:
- 100 grams diced cucumber
- 100 grams diced bell pepper (any color)
- 100 grams grated carrot
- 100 grams thinly sliced radish
- 50 grams finely shredded red cabbage
- 50 grams halved cherry tomatoes
- 30 grams roasted sunflower seeds
- 15 grams roasted pumpkin seeds
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and pepper, to taste
- Fresh parsley or cilantro, chopped for garnish
Procedure:
- In a large bowl, combine the diced cucumber, bell pepper, grated carrot, sliced radish, shredded red cabbage, and halved cherry tomatoes.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to coat all the vegetables evenly.
- Sprinkle the roasted sunflower and pumpkin seeds over the top of the salad for added crunch and flavor.
- Garnish with fresh parsley or cilantro before serving.
