Garlic Vegetable Soup

This Garlic Vegetable Soup is a warm, comforting dish with fresh, vibrant vegetables and a rich garlic aroma. The garlic perfectly complements the natural flavors of carrots, potatoes, celery, and spinach, while the oregano and thyme add subtle herbaceous notes. This soup is ideal for a nourishing meal, particularly on cold days, and is packed with immune-boosting properties.
For a Serving Size of Two:
Ingredients:
- 200 grams diced carrots
- 150 grams diced potatoes
- 100 grams chopped celery
- 50 grams chopped spinach
- 2 -3 cloves minced garlic
- 1 teaspoon olive oil
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon salt, or to taste
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 500 ml vegetable broth or water
- 1 tablespoon chopped fresh parsley, for garnish
Procedure:
- In a pot, heat the olive oil over medium heat.
- Add the minced garlic and sauté until golden and fragrant, being careful not to burn it.
- Add the diced carrots, potatoes, and chopped celery. Sauté for 3-4 minutes until they begin to soften.
- Stir in black pepper, salt, oregano, and thyme, mixing well with the vegetables.
- Pour in the vegetable broth or water, and bring the soup to a boil. Reduce heat and let it simmer for about 15 minutes until vegetables are tender.
- Add the chopped spinach, stir, and cook for another 2 minutes.
- Remove from heat, garnish with fresh parsley, and serve warm.
