Oats Khichdi

Oats Khichdi is a nutritious and wholesome one-pot meal combining oats, moong dal, and mixed vegetables. It is a delicious and hearty dish, perfect for a comforting breakfast, lunch, or light dinner, offering a perfect balance of protein, fiber, and essential nutrients.

For a Serving Size of Two:

Ingredients:

  • 60 grams rolled oats
  • 40 grams yellow moong dal (split yellow lentils)
  • 100 grams chopped mixed vegetables (carrot, peas, beans, etc.)
  • 50 grams finely chopped onion
  • 50 grams chopped tomatoes
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/4 tsp red chili powder
  • 1/2 tsp  grated ginger
  • 2 teaspoons olive oil
  • Salt to taste
  • 500 ml water
  • Fresh coriander leaves for garnish

Procedure:

  1. Rinse the moong dal thoroughly and cook in 250 ml water until soft. Set aside.
  2. In a pan, heat olive oil. Add cumin seeds and allow them to splutter. Then add chopped onions and grated ginger. Sauté until onions are translucent.
  3. Stir in chopped vegetables and tomatoes. Cook for 3-4 minutes.
  4. Add rolled oats, turmeric, red chili powder, and salt. Stir for a minute, then pour in the cooked moong dal and remaining 250 ml water. Let everything simmer for 5-7 minutes, stirring occasionally until oats are cooked and the khichdi has a soft consistency.
  5. Sprinkle fresh coriander leaves on top and serve hot with a side of yogurt or pickle.
