Sweet Potato Tortilla

The Sweet Potato Tortilla is a delightful blend of flavors and textures, combining the natural sweetness of sweet potatoes with the earthiness of chickpea flour and fresh spinach. These golden-brown tortillas are perfect as a snack or a light meal, offering a satisfying crunch and a hint of spice. Enjoy them with your favorite chutney or use them as a wrap for your favourite fillings.

For a Serving Size of Two:

Ingredients:

  • 150 grams peeled and grated sweet potato
  • 50 grams chickpea flour (besan)
  • 30 grams finely chopped spinach
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon olive oil (for cooking)
  • Water as needed to make a batter (approximately 100-150 ml)

Procedure:

  1. In a mixing bowl, combine the chickpea flour, cumin seeds, turmeric powder, red chili powder, black pepper, and salt.
  2. Gradually add water to the dry ingredients, mixing continuously to form a smooth, lump-free batter.
  3. Add the grated sweet potato and chopped spinach to the batter, mixing well to ensure everything is evenly coated.
  4. Heat a non-stick skillet or frying pan over medium heat and add a small amount of olive oil.
  5. Pour a portion of the batter onto the skillet, spreading it out evenly with the back of a spoon to form a thin tortilla.
  6. Cook the tortilla for 3-4 minutes on each side, or until it is golden brown and cooked through.
  7. Remove the tortilla from the skillet and repeat the process with the remaining batter.
  8. Serve the sweet potato tortillas warm, with your mint chutney or as a wrap for other fillings.
