Asparagus Noodles

Asparagus Noodles is a light and vibrant dish featuring tender asparagus, zucchini, and colorful vegetables, all sautéed together for a quick, nutritious meal. This dish is packed with flavor and can be served warm or cold, making it versatile for any occasion.
For a Serving Size of Two:
Ingredients:
- 200 grams asparagus, trimmed and cut into thin strips (or spiralized)
- 150 grams zucchini, spiralized (or cut into thin noodles)
- 100 grams cherry tomatoes, halved
- 50 grams red bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Procedure:
- Heat 1 tbsp of olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds).
- Add the asparagus and cook for 3-4 minutes until tender but still crisp.
- Add the zucchini noodles, bell pepper, and cherry tomatoes. Cook for another 2-3 minutes, tossing gently.
- Pour in the soy sauce and sprinkle with red pepper flakes (if using). Season with salt and pepper to taste. Cook for an additional minute.
- Remove from heat and garnish with fresh basil or parsley before serving.
