The Lemon Coconut Smoothie offers a refreshing blend of creamy coconut milk and Greek yogurt with the zesty brightness of lemon. The addition of shredded coconut and chia seeds adds texture and nutritional value.
For a Serving Size of Two:
Ingredients:
- 240 ml coconut milk
- 120 grams Greek yogurt
- 40 grams shredded coconut
- Juice of 1 lemon
- Zest of 1 lemon
- 1 tablespoon chia seeds
- Ice cubes (optional, for a chilled smoothie)
Procedure:
- Juice and zest the lemon.
- Measure out the coconut milk, Greek yogurt, and shredded coconut.
- In a blender, combine the coconut milk, Greek yogurt, shredded coconut, lemon juice, lemon zest, and chia seeds.
- Blend until smooth and creamy.
- If the smoothie is too thick, add more coconut milk to reach your desired consistency.
