Pesto Chicken Roll

Pesto Chicken Roll is a healthy and flavorful meal featuring tender chicken, fresh spinach, and vibrant bell peppers wrapped in a whole wheat tortilla with a delicious pesto spread. This easy-to-make dish is not only quick but also packed with nutrients, making it a perfect option for a wholesome lunch or light dinner.

For a Serving Size of Two:

Ingredients:

  • 200 grams chicken breast, thinly sliced
  • 30 grams pesto sauce (homemade or store-bought)
  • 50 grams whole wheat wrap or tortilla
  • 50 grams spinach leaves
  • 50 grams bell peppers, thinly sliced
  • 1/2 tsp olive oil
  • Salt and pepper to taste

Procedure:

  1. Season the chicken slices with salt and pepper. Heat 1/2 tsp olive oil in a pan and cook the chicken until fully cooked and no longer pink, about 5-7 minutes.
  2. Spread 15 grams of pesto sauce on each tortilla.
  3. Layer the spinach leaves, bell peppers, and cooked chicken slices on top of the pesto.
  4. Roll the tortillas tightly and slice in half. Serve immediately or wrap in foil for later.
