Avocado Lettuce Sandwich

The Avocado Lettuce Sandwich is a fresh and nutritious meal option, perfect for a quick lunch or a light dinner. The creamy avocado spread, flavored with lemon juice, salt, and pepper, serves as a rich and satisfying base. For a Serving Size of Two:

Ingredients:

  • 1 ripe avocado
  • 4 whole wheat/ multigrain bread
  • 4-6 lettuce leaves
  • 50 grams sliced tomatoes
  • 50 grams sliced cucumber
  • 50 grams sliced onion
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Procedure:

  • In a bowl, mash the avocado with a fork. Add lemon juice, salt, and pepper to taste. Mix well.
  • If desired, lightly toast the bread slices.
  • Spread the mashed avocado evenly on two of the bread slices. Layer lettuce leaves on top of the avocado spread.
  • Add tomato, cucumber, and red onion slices on top of the lettuce. Drizzle olive oil over the vegetables, if desired.
  • Place the remaining bread slices on top to form sandwiches. Cut each sandwich in half, if desired, and serve immediately.
