Spinach Pancakes

For a Serving Size of Two:
Ingredients:
- 50 grams spinach leaves
- 50 grams whole wheat flour
- 1 small mashed banana (about 60 grams)
- 100 ml milk
- 1/4 teaspoon baking powder
- 1/8 teaspoon cinnamon powder
- 1 teaspoon olive oil
- A pinch of salt
Procedure:
- Blanch the spinach in boiling water for 1-2 minutes, then drain and blend into a smooth puree.
- In a mixing bowl, combine the spinach puree, whole wheat flour, mashed banana, milk, baking powder, cinnamon, and salt. Mix until smooth and lump-free.
- Heat a non-stick pan over medium heat and lightly brush with olive oil. Pour a small ladle of batter onto the pan, spreading it to form a pancake. Cook for 2-3 minutes on each side or until golden.
- Serve warm with a drizzle of yogurt, fruit slices, or a sprinkle of seeds.
