Pumpkin Spice Muffins

These Pumpkin Spice Muffins are a cozy, autumn-inspired treat featuring a blend of warm spices like cinnamon, nutmeg, and ginger. Made with whole wheat and oat flour for added nutrition, they are sweetened naturally with pumpkin puree and applesauce. The addition of olive oil and vanilla extract enhances the flavor and texture, making these muffins moist and flavorful. Perfect for a healthy snack or dessert.
For a Serving Size of Two:
Ingredients:
- 60 grams whole wheat flour
- 30 grams oat flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 100 grams pumpkin puree
- 1 large egg
- 50 grams unsweetened applesauce (made from cooking apples and water together into a thick mixture)
- 1 tablespoon olive oil
- 1/2 teaspoon vanilla extract
Procedure:
- Preheat your oven to 180°C (350°F) and line a muffin tin with 2 muffin liners or lightly grease it.
- In a bowl, combine the whole wheat flour, oat flour, ground cinnamon, ground nutmeg, ground ginger, and salt. Mix well.
- In another bowl, whisk together the pumpkin puree, egg, applesauce, olive oil, and vanilla extract until smooth and well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Divide the batter evenly between the 2 muffin cups. Smooth the tops if needed.
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. - Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
