Rainbow Salad

The Rainbow Salad is a vibrant and nutrient-packed dish featuring a colourful mix of fresh vegetables and chickpeas. With carrots, beetroot, purple cabbage, cucumber, tomatoes, and onions, it offers a rich variety of textures and flavours. The salad is tossed with a zesty lemon juice dressing and seasoned with salt, pepper, and chaat masala for an extra kick.

For a Serving Size of Two:

Ingredients:

  • 60 grams chickpeas, soaked overnight and boiled till cooked
  • 60 grams chopped carrot
  • 60 grams chopped beetroot
  • 60 grams shredded purple cabbage
  • 60 grams chopped cucumber
  • 50 grams diced tomatoes 
  • 50 grams diced onions 
  • 1 tablespoon lemon juice 
  • Salt and pepper to taste
  • ½ teaspoon chaat masala

Procedure: 

  1. In a large mixing bowl, add the chopped carrot, beetroot, purple cabbage, cucumber, chickpeas, tomato, and onion.
  2. Pour the lemon juice over the salad ingredients. Add salt to taste. Sprinkle pepper and chaat masala over. 
  3. Toss all the ingredients together until well combined and evenly coated with lemon juice, salt, and spices.
  4. Serve the Rainbow Salad immediately!
