Keto Mac and Cheese

For a Serving Size of Two:
Ingredients:
- 150 grams cauliflower florets
- 40 grams cheddar cheese
- 30 grams mozzarella cheese
- 20 grams cream cheese
- 100 ml cream
- 1 teaspoon garlic, minced
- 1 teaspoon olive oil
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon mustard powder
- Salt to taste
- Fresh parsley for garnish
Procedure:
- Steam the cauliflower florets until tender but firm (around 5-7 minutes). Drain and set aside.
- In a pan, heat olive oil and sauté the minced garlic until fragrant. Add heavy cream and bring it to a gentle simmer. Stir in cheddar, mozzarella, and cream cheese. Keep stirring until the cheese melts and forms a smooth sauce.
- Add black pepper, paprika, mustard powder, and salt. Stir the sauce until everything is well combined.
- Add the steamed cauliflower to the cheese sauce, tossing gently to coat the florets evenly with the cheesy goodness. Let it simmer for 2-3 minutes for the flavors to meld.
- Garnish with freshly chopped parsley and serve hot.
