Healthy Litti Chokha

Healthy Litti Chokha is a nutritious take on the traditional Bihari dish, combining wholesome whole wheat littis with a flavorful chokha made from roasted vegetables. The littis are filled with protein-rich sattu, making them both satisfying and nutritious. This dish is not only delicious but also represents the rustic flavors of Indian cuisine, perfect for a wholesome meal.

For a Serving Size of Two:

Ingredients:

For Litti:

  • 100 grams whole wheat flour
  • 50 grams sattu
  • 20 grams finely chopped onion
  • 10 grams grated ginger
  • 1 green chili, finely chopped
  • 1 teaspoon ajwain
  • 2 teaspoons mustard oil
  • Salt to taste
  • Water as needed for dough

For Chokha:

  • 200 grams brinjal (eggplant)
  • 100 grams tomatoes
  • 100 grams boiled potatoes
  • 20 grams finely chopped onion
  • 10 grams grated ginger
  • 5 grams garlic, minced
  • 5 grams green chilies, finely chopped
  • 1 teaspoon
  • Salt to taste
  • Fresh coriander leaves for garnishing

Procedure:

  • In a mixing bowl, combine whole wheat flour, ajwain, and salt. Gradually add water to form a soft dough. Cover and let it rest for 20-30 minutes.
  • In another bowl, mix sattu, finely chopped onion, grated ginger, green chilies, mustard oil, and salt. Add a little water if needed to bind the mixture.
  • Divide the dough into equal portions. Roll each portion into a small circle, place a tablespoon of the sattu filling in the center, and fold the edges to seal. Roll it gently into a ball.
  • Preheat the oven to 180°C (350°F). Place the littis on a baking tray and bake for about 30-35 minutes, turning halfway, until they are golden brown. Alternatively, you can also cook them on a tawa (griddle) over medium heat until browned and cooked through.
  • Roast the brinjal directly over the flame or in the oven until the skin is charred and the flesh is soft. Let it cool, then peel and mash.
  • Boil the potatoes and mash them. In a mixing bowl, combine the roasted brinjal, mashed potatoes, chopped tomatoes, finely chopped onion, grated ginger, minced garlic, green chilies, mustard oil, and salt. Mix well until all ingredients are combined.
  • Plate the littis with a generous serving of chokha, garnished with fresh coriander leaves if desired.
