Healthy Litti Chokha

For a Serving Size of Two:
Ingredients:
For Litti:
- 100 grams whole wheat flour
- 50 grams sattu
- 20 grams finely chopped onion
- 10 grams grated ginger
- 1 green chili, finely chopped
- 1 teaspoon ajwain
- 2 teaspoons mustard oil
- Salt to taste
- Water as needed for dough
For Chokha:
- 200 grams brinjal (eggplant)
- 100 grams tomatoes
- 100 grams boiled potatoes
- 20 grams finely chopped onion
- 10 grams grated ginger
- 5 grams garlic, minced
- 5 grams green chilies, finely chopped
- 1 teaspoon
- Salt to taste
- Fresh coriander leaves for garnishing
Procedure:
- In a mixing bowl, combine whole wheat flour, ajwain, and salt. Gradually add water to form a soft dough. Cover and let it rest for 20-30 minutes.
- In another bowl, mix sattu, finely chopped onion, grated ginger, green chilies, mustard oil, and salt. Add a little water if needed to bind the mixture.
- Divide the dough into equal portions. Roll each portion into a small circle, place a tablespoon of the sattu filling in the center, and fold the edges to seal. Roll it gently into a ball.
- Preheat the oven to 180°C (350°F). Place the littis on a baking tray and bake for about 30-35 minutes, turning halfway, until they are golden brown. Alternatively, you can also cook them on a tawa (griddle) over medium heat until browned and cooked through.
- Roast the brinjal directly over the flame or in the oven until the skin is charred and the flesh is soft. Let it cool, then peel and mash.
- Boil the potatoes and mash them. In a mixing bowl, combine the roasted brinjal, mashed potatoes, chopped tomatoes, finely chopped onion, grated ginger, minced garlic, green chilies, mustard oil, and salt. Mix well until all ingredients are combined.
- Plate the littis with a generous serving of chokha, garnished with fresh coriander leaves if desired.
