Feta Toasties with Tangy Salsa

For a Serving Size of Two:
Ingredients:
For Toasties:
- 2 slices of multigrain bread or sourdough bread
- 2 tablespoon feta cheese
- 1 teaspoon olive oil for toasting
For Salsa:
- 60 grams kiwi, peeled and quartered
- 40 grams onion, finely chopped
- 1 teaspoon chopped coriander leaves
- 1 teaspoon red chilli- garlic paste
- 1 teaspoon apple sider vinegar
- 1 tablespoon lemon juice
- Salt & pepper, to taste
Procedure:
- In a mixing bowl, combine all the ingredients of the salsa to start preparing, to suit your tastes, check the salt & pepper and spice levels and make adjustments.
- Store this filling in the refrigerator while preparing the toasties.
- Toast the bread slices until golden and crisp, either in the oven or in the bread toaster. Toasts should be covered with olive oil.
- You can either use a circular cookie cuter to cut the toasts into rounds or you can trim the corners and cut them into triangles.
- Arrange the toasted bread on the plate. Spread the toast with Salsa. Serve the toasties immediately after adding the feta cheese crumbles.
- Serve the feta toasties & salsa with Cold Coffee.
