Summer Grains Salad

This Summer Grains Salad is a vibrant and nutritious dish that captures the essence of summer with its fresh ingredients and colorful presentation. Packed with wholesome grains, crunchy vegetables, and a zesty dressing, this salad makes for a satisfying meal on hot days. For a Serving Size of Two:
Ingredients:
- 100 grams cooked quinoa
- 100 grams cooked farro (or any whole grain of your choice)
- 50 grams halved cherry tomatoes
- 50 grams diced cucumber, diced
- 30 grams diced bell pepper (any color)
- 30 grams finely chopped red onion
- 30 grams crumbled feta cheese
- 1 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey
- Salt and black pepper, to taste
- Fresh basil or parsley, chopped, for garnish
Procedure:
- Prepare quinoa and farro according to package instructions. Once cooked, drain and let cool.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper until well combined.
- In a large mixing bowl, combine the cooled quinoa, farro, cherry tomatoes, cucumber, bell pepper, and red onion.
- Pour the dressing over the grains and vegetables, tossing gently to coat evenly.
- Top with crumbled feta cheese, if using, and garnish with fresh herbs before serving.
