These Matcha Choco-Chip Cookies are a delightful blend of earthy matcha and rich dark chocolate, creating a unique flavor combination that’s both indulgent and healthy. The cookies are made with oat flour, providing a gluten-free base, while peanut butter and mashed banana add natural sweetness and a soft, chewy texture. The inclusion of matcha powder not only adds a vibrant green color but also infuses the cookies with a mild, refreshing flavor. With just the right amount of dark chocolate chips, these cookies are perfect for a quick, guilt-free treat.
For a Serving Size of Two:
Ingredients:
- 60 grams oat flour
- 1 teaspoon matcha powder
- 2 tablespoons peanut butter (homemade)
- 2 tablespoons mashed ripe banana
- 1/2 teaspoon vanilla extract
- 1 tablespoon dark chocolate chips (unsweetened or 70% cocoa)
- 1/2 teaspoon chia seeds (optional, for texture)
- A pinch of salt
Procedure:
- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a bowl, combine the oat flour, matcha powder, and a pinch of salt. Mix well to ensure the matcha is evenly distributed.
- In another bowl, mix the almond butter, mashed banana, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. If the dough is too sticky, you can add a little more oat flour.
- Gently fold in the dark chocolate chips and chia seeds (if using) until evenly distributed throughout the dough.
- Scoop out small portions of the dough (about a tablespoon each) and shape them into cookies. Place them on the prepared baking tray, leaving some space between each cookie.
- Bake the cookies in the preheated oven for 10-12 minutes or until they are slightly golden around the edges.
- Allow the cookies to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
