Goan Stir Fried Tofu

Ingredients:
- 200 grams firm tofu, cubed
- 1 small carrot, thinly sliced
- 1 small bell pepper (capsicum), thinly sliced
- 1 small onion, thinly sliced
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 green chili, finely chopped (adjust according to your spice preference)
- 1 tablespoon soy sauce
- 1 tablespoon tomato paste
- 1 teaspoon olive oil
- 1 teaspoon sesame seeds
- Salt to taste
- Freshly ground black pepper to taste
- Fresh coriander leaves for garnishing
Instructions:
- Heat olive oil in a pan or wok on medium heat.
- Add minced garlic, grated ginger, and green chili. Sauté for a minute until fragrant.
- Add thinly sliced onions and cook until they turn translucent.
- Add sliced carrots and bell peppers. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still retain their crunch.
- Push the vegetables to one side of the pan and add the cubed tofu to the empty space. Cook the tofu for about 2-3 minutes on each side until it turns golden brown.
- Mix the tofu with the stir-fried vegetables.
- In a small bowl, whisk together soy sauce and tomato paste and sesame seeds. Pour the sauce over the tofu and vegetables. Mix well to coat everything evenly.
- Season with salt and freshly ground black pepper according to taste.
- Stir-fry for another 1-2 minutes until the tofu and vegetables are well coated and heated through.
- Garnish with fresh coriander leaves and serve hot.
