Scrambled Eggs with Black Bean Feta Cheese

Enjoy a delicious and savory omelette made with whole eggs, creamy Greek feta, and a mix of tender black beans and fresh spinach. Perfect for a hearty breakfast or a quick lunch, it’s both simple to make and utterly delightful.

For a Serving Size of Two:

Ingredients:

  • 2 whole eggs 
  • 2 tablespoon milk 
  • 20 grams black beans, cooked
  • 15 grams chopped baby spinach
  • 2 chopped green chillies
  • 2 tablespoon crumbled Greek feta cheese
  • Salt and pepper to taste
  • 1.5 tsp olive oil

Procedure:

  1. In a small bowl, whisk together the eggs and milk and add seasonings. 
  2. To a non-stick frying pan add olive oil and heat it up over medium heat, add cooked beans, green chillies, and spinach for 1-2 minutes, or until the spinach has wilted. Place in another bowl. 
  3. As you gently whisk with a wooden spoon, pour the egg mixture into the pan and heat until the eggs are barely set. Combine the spinach and beans mixture and let it cook. 
  4. To serve, top with the feta.
