Scrambled Eggs with Black Bean Feta Cheese

Enjoy a delicious and savory omelette made with whole eggs, creamy Greek feta, and a mix of tender black beans and fresh spinach. Perfect for a hearty breakfast or a quick lunch, it’s both simple to make and utterly delightful.
For a Serving Size of Two:
Ingredients:
- 2 whole eggs
- 2 tablespoon milk
- 20 grams black beans, cooked
- 15 grams chopped baby spinach
- 2 chopped green chillies
- 2 tablespoon crumbled Greek feta cheese
- Salt and pepper to taste
- 1.5 tsp olive oil
Procedure:
- In a small bowl, whisk together the eggs and milk and add seasonings.
- To a non-stick frying pan add olive oil and heat it up over medium heat, add cooked beans, green chillies, and spinach for 1-2 minutes, or until the spinach has wilted. Place in another bowl.
- As you gently whisk with a wooden spoon, pour the egg mixture into the pan and heat until the eggs are barely set. Combine the spinach and beans mixture and let it cook.
- To serve, top with the feta.
