Sweet Chilli Mango Spring Rolls

Sweet Chili Mango Spring Rolls offer a refreshing blend of sweet, tangy, and spicy flavors. With juicy mango, crunchy veggies, and fresh herbs, these rice paper rolls are perfect for a light, healthy snack or appetizer.

For a Serving Size of Two:

Ingredients:

 

  • 1 ripe mango (150 grams, thinly sliced)
  • 60 grams julienned carrots
  • 50 grams julienned cucumber
  • 4 rice paper wrappers
  • 20 grams fresh mint leaves
  • 20 grams fresh cilantro leaves
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sesame seeds

Method:

  • In a bowl, toss mango, carrots, cucumber, mint, and cilantro with lime juice and sweet chili sauce.
  • Dip one rice paper wrapper into warm water for 10-15 seconds, until soft but not too sticky.
  • Place a small amount of the filling in the center of the softened wrapper.
  • Fold the bottom over the filling, then fold the sides in, and roll tightly.
  • Continue the process with the remaining wrappers and filling.
  • Slice each roll in half, sprinkle with sesame seeds if desired, and serve with extra sweet chili sauce for dipping.
