Pudina Paniyaram

Pudina Paniyaram is a flavorful and nutritious South Indian snack made from a blend of rice and lentil batter, enriched with fresh mint leaves and assorted vegetables. The batter, seasoned with spices like turmeric and red chili powder, is cooked in a special appe pan to create golden-brown, crispy bites. These paniyarams are light, yet satisfying, with the refreshing aroma of mint and the crunch of onions, tomatoes, and corn.

For a Serving Size of Two:

Ingredients:

  • 60 grams rice
  • 30 grams split urad dal
  • 30 grams chana dal
  • 1 tablespoon finely chopped pudina (mint leaves)
  • 30 grams finely chopped onion
  • 30 grams finely chopped tomatoes
  • 20 grams boiled corn
  • 1 small green chili, finely chopped
  • 1/4 teaspoon ginger, grated
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon mustard seeds
  • 1 teaspoon oil
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • Salt to taste
  • 1/2 cup water (for batter)

Procedure:

  • Soak the rice, urad dal, and chana dal together in water for at least 4 hours or overnight.
  • Drain the soaked ingredients and grind them into a smooth batter, adding water as needed.
  • Transfer the batter to a bowl and mix in chopped pudina, all the vegetables, green chili, ginger, turmeric powder, red chili powder, and salt.
  • Heat oil in a pan, add cumin seeds and mustard seeds, and let them splutter. Then add this tempering to the batter and mix well.
  • Heat an appe pan (paniyaram pan) and lightly grease the cavities with oil.
  • Pour spoonfuls of batter into each cavity of the pan.
  • Cook on medium heat for about 2-3 minutes on each side, until golden brown and cooked through.
  • Serve hot with coconut chutney or your preferred dip.

Nutritional Benefits:

  • Pudina Paniyaram combines wholesome ingredients to deliver both taste and nutrition. The primary components—rice, urad dal, and chana dal—provide a balanced mix of carbohydrates and protein.
  • The inclusion of mint leaves (pudina) adds a burst of flavor while also offering digestive benefits and antioxidant properties.
  • Onions and tomatoes contribute vitamins and minerals, including vitamin C and lycopene, which support immune health and combat oxidative stress. Corn adds a touch of sweetness and additional fiber, promoting digestive health.
  • This dish is low in fat and provides a hearty dose of fiber, making it a suitable choice for a healthy snack or light meal. Enjoying Pudina Paniyaram with a side of coconut chutney not only complements its taste but also adds extra nutrients and flavors.
