Kothamalli Sadam (Coriander Rice)

For a Serving Size of Two:
Ingredients:
- 150 grams cooked rice (preferably brown rice)
- 50 grams fresh coriander leaves
- 30 grams finely chopped onion
- 30 grams finely chopped tomato
- 2 – 3 green chilies, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon lemon juice
- 2 teaspoons oil
- ½ teaspoon cumin seeds
- ½ teaspoon mustard seeds
- ½ teaspoon turmeric powder
- Salt to taste
Procedure:
- In a pan, heat the oil and add mustard seeds and cumin seeds. Once they splutter, add the finely chopped onions and sauté until translucent.
- Add the ginger-garlic paste and green chilies, cooking for another minute.
- Stir in the chopped tomatoes and turmeric powder. Cook until the tomatoes are soft.
- Add the cooked rice and gently mix until well combined. Stir in the chopped coriander leaves and lemon juice, and cook for an additional 2-3 minutes, ensuring everything is heated through.
- Season with salt to taste and serve hot.
