Oatmeal Muffins

For a Serving Size of Two:

Ingredients:

  • 60 grams oats
  • 50 grams mashed ripe banana
  • 50 grams plain yogurt
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon powder
  • 20 grams chopped nuts
  • 1/4 teaspoon salt

Procedure:

  • Preheat your oven to 180°C (350°F) and line a muffin tray with paper liners or lightly grease it.
  • In a mixing bowl, combine the oats, mashed banana, plain yogurt, egg, vanilla extract, cinnamon powder salt, and chopped nuts. Mix until well combined.
  • Divide the batter evenly between the 2 muffin cups in the tray.
  • Bake in the preheated oven for 15-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tray for 5 minutes before transferring them to a wire rack to cool completely.
