Quinoa Stuffed Okra

This is not your average stuffed okra recipe. Stuffed with quinoa, this is a great evening snack and can be used as a side dish as well.
Ingredients:
- 12-15 fresh okra pods
- 1 cup cooked quinoa
- 1/2 cup diced bell peppers (any color)
- 1/2 cup diced tomatoes
- 1/4 cup finely chopped onions
- 2 cloves garlic, minced
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon cumin powder
- 1/4 teaspoon paprika
- 1/4 teaspoon salt (adjust to taste)
- 1 teaspoon olive oil
Instructions:
- Preheat your oven to 375°F (190°C).
- Wash the okra pods and trim off the ends. Make a slit lengthwise in each pod, creating a pocket for stuffing. Be careful not to cut through the whole pod.
- In a medium-sized bowl, combine the cooked quinoa, diced bell peppers, diced tomatoes, chopped onions, minced garlic, turmeric powder, cumin powder, paprika, and salt. Mix well to combine all the ingredients.
- Take each okra pod and stuff it generously with the quinoa mixture. Gently press the sides of the pod to close the opening.
- Heat olive oil in a skillet over medium heat. Place the stuffed okra pods in the skillet and cook for about 3-4 minutes, turning occasionally, until they are lightly browned.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the okra pods are tender.
- Once cooked, remove from the oven and let them cool for a few minutes before serving.
