Spinach and Pearl Millet Salad is a refreshing and nutritious dish that combines the tender freshness of baby spinach with the nutty flavor of cooked pearl millet. Diced cucumber, tomato, and onion add crispness and vibrant color, while fresh coriander brings a burst of aromatic flavor. Tossed in a simple lemon and olive oil dressing, this salad is both light and satisfying, perfect for a healthy meal or a side dish.
For a Serving Size of Two:
Ingredients:
- 30 grams fresh baby spinach leaves
- 60 grams of cooked pearl millets
- 60 grams diced cucumber
- 40 grams diced tomato
- 60 grams diced onion
- 2 tablespoons chopped coriander
- 2 teaspoons olive oil
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Procedure:
- In a large bowl, combine the fresh baby spinach leaves, cooked pearl millet, diced cucumber, tomato, red onion, and chopped fresh coriander.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
- Pour the dressing over the salad ingredients and toss well to combine.
- Adjust the seasoning if needed.
- Serve the spinach and quinoa salad as a refreshing and nutritious meal.
