Zucchini Pizza Bites

Zucchini Pizza Bites are a delightful and nutritious twist on traditional pizza, perfect as a snack or appetizer. These bite-sized treats offer the familiar flavors of pizza with a fraction of the calories.
For a Serving Size of Two:
Ingredients:
- 1 large zucchini
- 60 grams crumbled feta cheese
- 1 teaspoon olive oil
- 100 ml tomato sauce (tomatoes cooked and mashed into a paste)
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil leaves for garnish
Procedure:
- Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper. Arrange the zucchini slices on the baking sheet. Brush both sides with olive oil and season with a little salt and pepper.
- Bake the zucchini slices in the preheated oven for 5-7 minutes until they start to soften but are still firm enough to hold the toppings.
- Remove the zucchini from the oven and spread a small amount of natural tomato sauce on each slice. Sprinkle each slice with a pinch of dried oregano, dried basil, and garlic powder.
- Top each zucchini slice with crumbled feta cheese.
- Return the zucchini slices to the oven and bake for an additional 5-7 minutes, or until the cheese is slightly melted and the edges of the zucchini are golden.
- Garnish with fresh basil leaves if desired. Serve the zucchini pizza bites warm as a healthy and delicious snack or appetizer.
