Paneer Bhurji with Peas Amaranth Roti

For a Serving Size of Two:
Ingredients:
For Paneer Bhurji
- 80 grams paneer, crumbled
- 50 grams finely chopped onion
- 50 grams finely chopped tomato
- 1 small green chili
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/4 teaspoon garam masala
- 1 teaspoon oil
- Salt to taste
For Amaranth Roti:
- 60 grams amaranth flour
- 20 grams whole wheat flour
- 50 grams boiled peas
- 1/4 teaspoon salt
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon carom seeds (ajwain)
- 1/2 teaspoon oil
- Water as needed to make the dough
Procedure:
- Heat oil in a pan over medium heat.
- Add cumin seeds and let them sizzle for a few seconds. Add the chopped onion and green chili. Sauté until the onions are translucent. Add the chopped tomato and cook until it becomes soft. Add turmeric powder, red chili powder, and salt. Stir well.
- Add the crumbled paneer and mix well. Cook for another 2-3 minutes.
- Sprinkle garam masala over the paneer bhurji and mix. Remove from heat and set aside.
- In a mixing bowl, combine amaranth flour, whole wheat flour, salt, cumin seeds, and carom seeds.
- Add the cooked and mashed peas to the flour mixture. Gradually add water, a little at a time, and knead to form a smooth and pliable dough. The dough should be soft but not sticky.
- If using, add oil to the dough for extra softness and knead well.
- Cover the dough and let it rest for about 10 minutes.
- Divide the dough into small balls (about the size of a golf ball).
- Roll each ball out into thin circles (about 6 inches in diameter) on a floured surface. Be gentle while rolling to avoid tearing.
- Heat a non-stick skillet or griddle over medium-high heat.
- Cook each roti for about 1 minute on each side, or until lightly browned and cooked through. Press down with a spatula if needed to ensure even cooking.
- Keep the cooked rotis warm in a cloth or towel while you cook the remaining ones.
- Serve hot with Paneer Bhurji!
