This Chicken Salad with Grapes is a delightful combination of textures and flavors, perfect for a light meal or refreshing snack. For a Serving Size of Two:
Ingredients:
- 150 grams cooked chicken breast, cubed or shredded
- 80 grams halved red or green grapes
- 50 grams finely chopped celery
- 40 grams diced apple
- 30 grams roughly chopped walnuts
- 30 grams Greek yogurt
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1/2 teaspoon lemon juice
- Salt and black pepper, to taste
- Fresh parsley or chives, for garnish (optional)
Procedure:
- In a small bowl, mix the Greek yogurt, Dijon mustard, honey, and lemon juice until well combined. Add salt and pepper to taste.
