Apple-Oatmeal Cookies are a wholesome treat that combines the chewy texture of oats with the natural sweetness and tartness of apples. With the addition of raisins or chopped dates, they offer a delightful burst of sweetness in every bite. Baked until golden brown, these cookies are perfect for a quick snack or a light dessert that’s both satisfying and nourishing.
For a Serving Size of Two:
Ingredients:
- 60 grams rolled oats
- 1 large peeled and finely chopped apple
- 50 grams whole wheat flour
- 2 teaspoons coconut oil
- 2 tablespoons raisins or chopped dates
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- A pinch of salt
Procedure:
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a small bowl, toss the finely chopped apple with a pinch of cinnamon. This helps to evenly distribute the flavor.
- In a large mixing bowl, combine the oats, whole wheat flour, ground cinnamon, baking powder, and salt. Mix well.
- In a separate bowl, mix the melted coconut oil and add the chopped apples and any optional raisins or dates.
- Add the wet ingredients to the dry ingredients and mix until well combined. The mixture will be slightly sticky.
Drop spoonfuls of the dough onto the prepared baking sheet, flattening them slightly with the back of the spoon. - Bake for 12-15 minutes or until the edges are golden brown and the cookies are set.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
