Sweet Potato Feta Slices

Sweet Potato Feta Slices are a savory and nutritious snack featuring tender, baked sweet potato rounds topped with crumbled feta cheese and fresh coriander. Seasoned with a blend of oregano, thyme, garlic powder, paprika, and black pepper, these slices offer a delightful combination of flavors. This easy-to-make recipe provides a delicious and healthy option for a snack or side dish.

For a Serving Size of Two:

Ingredients:

  • 2 medium sweet potatoes, peeled and sliced into 1/4-inch rounds
  • 1 teaspoons olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (adjust to taste)
  • 50 grams feta cheese, crumbled
  • 1 tablespoon fresh coriander, chopped 

Procedure:

  1. Preheat your oven to 200°C (400°F).
  2. Peel and slice the sweet potatoes into 1/4-inch thick rounds.
  3. In a large bowl, toss the sweet potato slices with olive oil, oregano, thyme, garlic powder, paprika, black pepper, and salt until well coated.
  4. Arrange the sweet potato slices in a single layer on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for about 20 minutes, then flip the slices and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and lightly golden.
  6. Remove the sweet potato slices from the oven.
  7. Sprinkle the crumbled feta cheese evenly over the slices.
  8. Return to the oven for another 5 minutes, or until the feta cheese is slightly melted and warmed.
  9. Garnish with fresh coriander 
  10. Serve warm as a tasty snack.
