Salmon Sandwich

For a Serving Size of Two:
Ingredients:
- 120 grams cooked salmon
- 60 grams Greek yogurt
- 1 tablespoon chopped dill or parsley
- 1 tablespoon lemon juice
- 2 whole-grain bread slices
- 50 grams thinly sliced cucumber
- 50 grams thinly sliced tomato
- Salt and pepper to taste
Procedure:
- In a bowl, mix the flaked salmon, Greek yogurt, chopped dill, lemon juice, salt, and pepper until well combined.
- Spread the salmon mixture evenly on one slice of bread.
- Layer with cucumber and tomato slices.
- Top with the second slice of bread.
- Cut the sandwich in half and serve immediately, or wrap it for a packed lunch.
