Barley and Bean Salad

For a Serving Size of Two:
Ingredients:
- 100 grams cooked barley
- 80 grams cooked chickpeas
- 80 grams cooked black bean
- 100 grams diced bell peppers
- 50 grams diced red onion
- 100 grams diced cucumber
- 50 grams halved cherry tomatoes
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon cumin powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Procedure:
- In a large mixing bowl, combine the cooked barley, chickpeas, black beans, diced bell peppers, diced red onion, diced cucumber, and halved cherry tomatoes.
- In a separate small bowl, whisk together the olive oil, lemon juice, cumin powder, salt, and black pepper until well blended.
- Pour the dressing over the salad mixture and toss gently to ensure all ingredients are well coated.
- Top the salad with chopped fresh parsley and serve immediately, or let it chill in the refrigerator for a bit to enhance the flavors.
