A Walnut Salad that’s quick, healthy and delicious

The Walnut Veggie Salad is a delightful medley of textures and flavors, combining crisp vegetables with the rich, buttery crunch of walnuts. For a Serving Size of Two:
Ingredients:
- 150 grams mixed salad greens (spinach, arugula, and lettuce)
- 100 grams diced cucumber
- 100 grams diced bell pepper (any color)
- 100 grams grated carrot
- 100 grams halved cherry tomatoes
- 50 grams chopped red onion
- 50 grams roughly chopped walnuts
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon sal
- 1/4 teaspoon black pepper
- Fresh parsley or basil leaves for garnish
Procedure:
- Wash and dry the salad greens. Dice the cucumber, bell pepper, and onion. Grate the carrot and halve the cherry tomatoes.
- In a large salad bowl, combine the mixed salad greens, diced cucumber, diced bell pepper, grated carrot, halved cherry tomatoes, and chopped red onion.
- Gently fold in the chopped walnuts into the salad mixture.
- In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and black pepper until well combined.
- Pour the dressing over the salad and toss gently to ensure all ingredients are coated evenly.
- Garnish with fresh parsley or basil leaves if desired. Serve immediately.
