Bruschetta

Bruschetta is an Italian dish which is basically toasted bread with some delicious toppings. They make for a fancy finger food and crunchie-munchie snack which are incredibly easy to make for kids. If your kids are fussy eaters when it comes to vegetables, then this tasty and healthy recipe is bound to change their opinions about veggies. By adding fresh herbs you can make the dish more flavourful.
For a Serving Size of Two:
Ingredients:
- 4 slices of whole wheat or multigrain baguette
- 1 large inely diced tomato
- 1 small clove minced garlic
- 8-10 chopped basil leaves
- 2 teaspoons extra virgin olive oil
- 1/4 teaspoon balsamic vinegar
- Salt to taste
- Freshly ground black pepper to taste
Procedure:
- In a mixing bowl, combine the diced tomato, minced garlic, chopped basil, olive oil, and balsamic vinegar. Season with salt and freshly ground black pepper to taste. Mix well and let it sit for a few minutes to allow the flavors to meld.
- Heat a grill pan or regular pan over medium heat. Lightly brush the baguette slices with a small amount of olive oil on both sides.
- Toast the slices on the pan until they are golden brown and crispy on both sides. You can also toast them in a preheated oven at 180°C (350°F) for about 5-7 minutes.
- Once the bread slices are toasted, top each slice with a generous spoonful of the tomato mixture. Serve the Bruschetta immediately as an appetizer or a light snack.
