Eat Like A Local- Heavenly Taste of Haryana

Haryana, also known as the ‘Land of rotis’, is one of the most economically developed provinces in India because of its agricultural prosperity. In this region, simple and pure, home-cooked food is extensively cherished. People generally have large areas of land, which they use both for commercial and non-commercial reasons. Haryanvis have a principle of consuming the purest form of dairy, hence they pet cows and buffaloes at their home. In fact, they make their own, fresh, home-made ghee, which is churned daily. Some popular dishes that the people of Haryana truly cherish in their day-to-day diet are:
- Kair Sangri Sabzi.
- Kachri Ki Chutney.
- Besan Masala Roti.
- Mixed Dal.
- Alsi Ki Pinni.
Kair Sangri is prepared either by first soaking them in turmeric-infused water overnight or by boiling them in water with a dash of salt for around 15 minutes. The desert beans and berries, though, are mostly associated with Rajasthan, are equally loved by Haryanvis. The best part is that you can also store in the refrigerator to savour it for about 8-10 days.
Kachri is the most commonly found vegetable in Haryana. It parallels a small brown-coloured lemon. People consume it in different ways, that is, in the form of chutney, pickle, or even sabzi. The chutney can also be stored in the refrigerator for a month.
Besan masala roti along with wheat and bajra(pearl millet) roti is extremely popular in Haryana. This Indian bread is made by combining gram flour, wheat flour and ghee. Other spices added to this dough are; red chilli powder, cumin powder, coriander powder and amchur(dry mango powder). It is then consumed along with raita or sabzi.
This protein-rich dish is made by combining different kinds of dals like; chana, toor, masoor and moong dal. It is cooked in ghee and kept thick. It is mostly consumed with rice.
It is a dessert made of flax seeds, wheat flour, sugar, nuts and ghee. It is rich in omega-3 fatty acids and also iron.
