Oats and Date Bars

Oats and Dates Bars are a delicious and nutritious snack, combining the wholesome goodness of rolled oats with the natural sweetness of dates. This easy-to-make treat is packed with healthy fats from almonds and walnuts, making it perfect for an energy boost any time of day.
For a Serving Size of Two:
Ingredients:
- 60 grams rolled oats
- 100 grams pitted dates
- 20 grams almonds, chopped
- 10 grams walnuts, chopped
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
- A pinch of salt
Procedure:
- Soak the pitted dates in warm water for 10 minutes to soften if they are too dry. Drain well.
- In a food processor, blend the soaked dates until smooth. If needed, add a little water to help blend.
- In a large bowl, mix the blended dates with rolled oats, chopped almonds, chopped walnuts, ground cinnamon, and a pinch of salt. If using, add vanilla extract.
- Line a small baking pan (about 8×4 inches) with parchment paper. Press the mixture firmly and evenly into the pan to form a compact layer. Refrigerate for at least 1 hour to set.
- Once set, remove from the pan and cut into bars or squares.
