Palm jaggery is a sweet version of jaggery. It has a texture that melts in the mouth. It is made from extracting sap of palm, which is extracted and churned into jaggery and has the nutritional benefits of dates. It is known as Karupatti in south India and acts as a substitute for crystallized white sugar. It has a rich sweetening taste but not the shortcomings of regular white sugar.
