Paneer Pesto Roll

Paneer Pesto Roll is a delightful fusion dish that brings together the creamy goodness of paneer and the fresh flavors of basil pesto. Wrapped in wholesome whole wheat tortillas and filled with crisp vegetables, this roll offers a perfect balance of textures and tastes. Ideal for a quick lunch or a healthy snack, it’s both satisfying and delicious.

For a Serving Size of Two:

Ingredients:

For Paneer Filling: 

  • 80 grams cubed paneer
  • 2 tablespoons basil pesto (homemade)
  • 1 teaspoon olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red chili flakes
  • 1/4 teaspoon lemon juice
  • A pinch of salt

For Wraps: 

  • 2 whole wheat tortillas or multigrain wraps
  • 4 -5 shredded lettuce leaves
  • 50 grams sliced bell peppers
  • 50 grams sliced cucumber
  • 30 grams grated carrots

Procedure:

  1. Heat olive oil in a pan over medium heat.
  2. Add the cubed paneer to the pan and cook until it starts to turn golden brown, about 3-4 minutes.
  3. Add black pepper, red chili flakes and a pinch of salt. Mix well.
  4. Stir in the basil pesto and lemon juice. Cook for another 2 minutes, making sure the paneer is well-coated with the pesto.
  5. Remove from heat and set aside.
  6. Warm the whole wheat tortillas or wraps slightly in a dry pan or microwave. Lay out the tortilla on a flat surface. Place a layer of shredded lettuce in the center of each tortilla.
  7. Add the sliced bell peppers, cucumber, and grated carrots on top of the lettuce.
  8. Spoon the pesto-coated paneer evenly over the vegetables.
  9. Roll the tortilla tightly from one end to the other, making sure to keep the filling inside.
  10. Serve immediately.
