Paneer Pesto Roll

For a Serving Size of Two:
Ingredients:
For Paneer Filling:
- 80 grams cubed paneer
- 2 tablespoons basil pesto (homemade)
- 1 teaspoon olive oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon red chili flakes
- 1/4 teaspoon lemon juice
- A pinch of salt
For Wraps:
- 2 whole wheat tortillas or multigrain wraps
- 4 -5 shredded lettuce leaves
- 50 grams sliced bell peppers
- 50 grams sliced cucumber
- 30 grams grated carrots
Procedure:
- Heat olive oil in a pan over medium heat.
- Add the cubed paneer to the pan and cook until it starts to turn golden brown, about 3-4 minutes.
- Add black pepper, red chili flakes and a pinch of salt. Mix well.
- Stir in the basil pesto and lemon juice. Cook for another 2 minutes, making sure the paneer is well-coated with the pesto.
- Remove from heat and set aside.
- Warm the whole wheat tortillas or wraps slightly in a dry pan or microwave. Lay out the tortilla on a flat surface. Place a layer of shredded lettuce in the center of each tortilla.
- Add the sliced bell peppers, cucumber, and grated carrots on top of the lettuce.
- Spoon the pesto-coated paneer evenly over the vegetables.
- Roll the tortilla tightly from one end to the other, making sure to keep the filling inside.
- Serve immediately.
