Ragi Bites with Creamy Cucumber Dip

Ragi Bites with Creamy Cucumber Dip is a wholesome and crunchy snack perfect for a quick bite or a light appetizer. The ragi bites are made from a blend of ragi and whole wheat flour, rolled thin and baked to a crisp, offering a nutty flavor and a satisfying crunch. Paired with a refreshing and creamy cucumber dip made from yogurt, grated cucumber, and a hint of mint, this dish combines texture and flavor beautifully, providing a deliciously healthy snack option.

For a Serving Size of Two:

Ingredients:

Ragi Bites:

  • 60 grams ragi flour
  • 15 grams whole wheat flour
  • 1 tablespoon olive oil
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon salt
  • Water, as needed to knead

Creamy Cucumber Dip:

  • 150 grams plain yogurt
  • 50 grams grated cucumber
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon chopped fresh mint leaves

Procedure:

  • In a bowl, mix ragi flour, whole wheat flour, cumin powder, and salt. Add olive oil and mix well.
  • Gradually add water to form a firm dough.
  • Preheat the oven to 180°C (350°F). Roll out the dough to about 1/4 inch thickness.
  • Cut into bite-sized pieces using a knife or cookie cutter. Place the pieces on a baking tray lined with parchment paper.
  • Bake for 15-20 minutes until crispy.
  • In a bowl, combine yogurt, grated cucumber, cumin powder, salt, black pepper, and mint leaves. Mix well and refrigerate until serving.
