Strawberry Mango Chia Popsicles are a delicious and nutritious way to beat the heat. Bursting with vibrant flavors from fresh strawberries and juicy mangoes, these popsicles are not only refreshing but also packed with health benefits from chia seeds, making them a perfect guilt-free treat for hot days.
For a Serving Size of Two:
Ingredients:
- 100 grams hulled and chopped strawberries
- 100 grams peeled and chopped mango
- 2 tablespoons chia seeds
- 200 ml coconut water or plain water
- 1 tablespoon lemon juice
- A pinch of salt
Procedure:
- In a blender, combine the chopped strawberries, mango, coconut water (or plain water), lemon juice, and a pinch of salt. Blend until smooth.
- Transfer the blended mixture to a bowl and stir in the chia seeds. Let it sit for about 5-10 minutes to allow the chia seeds to absorb some liquid and swell.
- Pour the fruit and chia mixture into popsicle molds, leaving a little space at the top for expansion. Insert sticks into the molds.
- Place the molds in the freezer and freeze for at least 4-6 hours or until completely solid.
- To remove the popsicles, run the molds under warm water for a few seconds. Gently pull the popsicles out and enjoy as a refreshing and healthy treat!
