Spinach and Mushroom Toastie

The Spinach and Mushroom Toastie is a hearty and nutritious sandwich that blends earthy mushrooms and fresh spinach with savory feta cheese. Whole grain bread adds a wholesome touch, while the creamy feta and seasoned vegetable filling offer a delightful contrast of flavors and textures. Perfect for a quick lunch or light dinner, this toastie is both satisfying and packed with essential nutrients.
For a Serving Size of Two:
Ingredients:
- 100 grams fresh spinach leaves
- 100 grams sliced mushrooms
- 2 teaspoons olive oil
- 50 grams finely chopped onion
- 1 clove minced garlic
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon basil
- 20 grams crumbled feta cheese
- 4 slices whole grain bread
Procedure:
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the sliced mushrooms to the skillet. Cook until the mushrooms are tender and have released their moisture, about 5-7 minutes.
- Add the spinach leaves and cook until wilted, about 2 minutes. Season with salt, black pepper, and basil. Remove from heat and set aside.
- Preheat a grill pan or non-stick skillet over medium heat.
- Spread butter or olive oil on one side of each slice of bread.
- Place 2 slices of bread, buttered side down, on the pan. Spoon half of the spinach and mushroom mixture evenly over the bread slices. Sprinkle cheese half over the filling. Top with the remaining slices of bread.
- Grill the toasties until golden brown and crispy on both sides, about 3-4 minutes per side. You can press down gently with a spatula to ensure even grilling.
- Remove from the pan and cut in half if desired. Serve warm.
