Strawberry Crepes

Strawberry Crepes are a delightful and healthy twist on a classic breakfast or dessert. These thin, tender crepes are made with a blend of whole wheat and oat flours, making them more nutritious and flavorful. They’re filled with a luscious mixture of fresh strawberries, chia seeds, and a hint of lemon juice, creating a naturally sweet and satisfying treat. Serve these crepes warm for a perfect balance of lightness and flavor, and consider garnishing with extra strawberries or chopped nuts for added texture and freshness.
For a Serving Size of Two:
Ingredients:
- 30 grams whole wheat flour
- 30 grams oats flour
- 1 large egg
- 150 ml milk
- 1 tablespoon melted coconut oil
- 1/2 teaspoon vanilla extract
- A pinch of salt
- 100 grams sliced strawberries
- 1 tablespoon chia seeds
- 1/2 teaspoon lemon juice
Procedure:
- In a small bowl, combine the sliced strawberries, chia seeds, and lemon juice. Let the mixture sit for about 10-15 minutes to allow the chia seeds to absorb some moisture and thicken slightly.
- In a mixing bowl, whisk together the whole wheat flour, egg, milk, melted coconut oil, vanilla extract, and a pinch of salt until smooth. The batter should be thin and pourable.
- Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with a small amount of coconut oil.
Pour a small amount of batter into the pan and tilt the pan to spread the batter into a thin, even layer. - Cook for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden. Flip and cook for another 1 minute on the other side. Remove and repeat with the remaining batter.
Place a crepe on a serving plate. Spoon a portion of the strawberry filling onto one half of the crepe. Fold the crepe over to cover the filling, or roll it up if you prefer. - Serve the crepes warm, garnished with additional fresh strawberries or a sprinkle of chopped nuts if desired.
