The Not-So- Boring Salad: Quinoa Tofu Salad

The Not-So-Boring Quinoa Tofu Salad is a colorful and satisfying dish that transforms ordinary salad into a delightful meal. Packed with plant-based protein from quinoa and tofu, this salad is not only nutritious but also incredibly filling. The vibrant mix of fresh vegetables adds crunch and flavor, while the dressing ties everything together with a zesty and savory kick. This salad is perfect for lunch or dinner, and it’s versatile enough to be enjoyed as a main dish or a hearty side.
For a Serving Size of Two:
Ingredients:
- 100 grams cooked quinoa
- 100 grams diced firm tofu
- 100 grams chopped kale
- 100 grams diced bell peppers (mixed colors)
- 100 grams halved cherry tomatoes
- 50 grams grated carrot
- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon toasted sesame seeds
- Fresh coriander leaves
Procedure:
- Rinse the quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with water (about double the amount of quinoa). Bring to a boil, then reduce the heat and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Let it cool.
- In a non-stick skillet over medium heat, add a small amount of oil and sauté the diced tofu until golden brown on all sides, about 5-7 minutes. Remove from heat and let it cool slightly.
- In a large mixing bowl, combine the cooked quinoa, sautéed tofu, chopped kale, diced bell peppers, halved cherry tomatoes, and grated carrot.
- In a small bowl, whisk together the olive oil, soy sauce, sesame oil, lemon juice, garlic powder, salt, and black pepper.
- Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
- Sprinkle toasted sesame seeds on top and garnish with fresh coriander leaves if desired. Serve immediately or let it chill in the refrigerator for enhanced flavors.
