Tofu Scramble

Tofu Scramble is a versatile and flavorful plant-based dish that mimics the texture of scrambled eggs. This recipe combines crumbled tofu with sautéed onions, bell peppers, and tomatoes, seasoned with turmeric, cumin, and paprika for a satisfying and nutrient-rich meal, making this scramble a delicious and hearty option for breakfast or a light lunch.
For a Serving Size of Two:
Ingredients:
- 200 grams firm tofu
- 2 teaspoons olive oil
- 50 grams finely chopped onion
- 50 grams finely chopped bell pepper
- 80 grams finely chopped tomato
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon cumin powder
- 1/4 teaspoon paprika
- Salt and black pepper, to taste
- 1 tablespoon nutritional yeast (optional, for a cheesy flavor)
Procedure:
- Drain the tofu and pat it dry with a paper towel. Crumble it into small pieces using your hands or a fork.
- Heat the olive oil in a skillet over medium heat.
- Add the chopped onion and sauté for 2-3 minutes until translucent. Add the diced bell pepper and cook for another 2 minutes. Add the diced tomato and cook until it starts to soften.
- Add the crumbled tofu to the skillet.
- Sprinkle in the turmeric powder, cumin powder, paprika (or chili powder), salt, and black pepper.
- Stir well to combine all the ingredients. Cook the mixture for 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden.
- If using nutritional yeast, sprinkle it over the tofu scramble and mix well. Garnish with fresh herbs if desired and serve warm.
