Garlicky Chicken Vegetable Skillet

For a Serving Size of Two:
Ingredients:
- 200 grams boneless chicken breast, cut into strips
- 50 grams finely chopped onion
- 50 grams sliced bell peppers (red, yellow, green)
- 50 grams sliced zucchini,
- 50 grams sliced carrots
- 30 grams spinach leaves
- 2 teaspoons garlic, minced
- 2 teaspoons olive oil
- 1/2 teaspoons black pepper (1/2 teaspoon)
- 1/2 teaspoons paprika (1/2 teaspoon)
- 1/2 teaspoons dried oregano (1/4 teaspoon)
- Salt to taste
- 1 teaspoon fresh parsley, chopped
Procedure:
- Heat 1 teaspoon of olive oil in a skillet over medium heat. Add the chicken strips, season with salt, pepper, and paprika, and cook for about 5-7 minutes until browned and fully cooked. Set aside.
- In the same skillet, heat the remaining teaspoon of olive oil. Add garlic and onions, sauté until fragrant. Then, add bell peppers, carrots, and zucchini, cooking for 4-5 minutes until slightly tender.
- Stir in spinach and cook for another 1-2 minutes until wilted. Add the cooked chicken back into the skillet and toss everything together. Season with dried oregano and adjust salt if needed.
- Garnish with freshly chopped parsley and serve hot.
