Mango Chia Pudding

Ingredients
- Coconut milk – 200 ml
- Chia seeds – 1 ½ tbsp
- Mango – 1 medium size
- Honey – 2 tbsp
- Vanilla essence- 1 tsp
- Granola – 2 tbsp
For garnish
- Mint sprigs- a few
- Chopped mangoes (as much)
Method
- Soak the chia seeds in coconut milk.
- Add the honey and vanilla to it and mix well.
- Divide the milk mixture into two parts.
- Peel the mango and make a puree of it by blending in a mixer grinder, mix this puree in half of the chia coconut milk.
- Take a desired glass and pour the mango chia milk in it. Leave the plain chia milk in another bowl.
- Refrigerate both for atleast an hour.
- Once chilled and partially set, start layering the pudding.
- On top of the mango chia milk mixture, add the granola in a an even and thin layer.
- Then with the help of a spoon, pour the plain chia milk on the granola.
- Finally top the pudding with chopped fresh mangoes and a sprig of mint and serve chilled.
