But one of the most important seasons that fall marks the start of is soup season. That’s right: It’s time to break out your favorite fall soup recipes and get cooking! A rich dietary source of fibre, folate and minerals, spring onions are low in calories and carry amazing benefits. Pea is rich in protein and can do wonders for digestion. Peas are good source of iron and helps in weight management.
Cut the white of the spring onions into long segments. Melt the butter in a large sauce pan, add the oil, white spring onion slices, halved garlic cloves and some salt and pepper, and sauté on moderate heat for 10-15 minutes, until the vegetables are soft. Add the peas and cook for another five minutes. Pressure cook for 2-4 whistles and blend when cool. Transfer the soup into individual bowls, sprinkle with chopped mint and lemon zest, and finish with a drizzle of oil.
As the temps start to drop, it’s time to finally head indoors and turn on the stove again. Bell peppers are rich in B vitamins and add a dose of flavour to your food. Tomatoes are rich in lycopene antioxidant which reduces the risk of heart disease and cancer. IT is great source of potassium, Vitamin C and Vitamin K. Saute bell peppers in butter and roast for a while. Add olive oil and add chilli, tomatoes, coriander leaves and paprika. Cook for a while and add the stock, salt and pepper, bring to the boil, reduce heat and simmer. Remove from the heat and stir in some black pepper, mixing thoroughly. Pour soup and blend until smooth. Serve hot!

Combine the tomatoes, lemon grass, curry leaves, ginger, salt and water in a large pot and bring to the boil. Cover, lower heat and simmer gently for 15 minutes. Put the pureed tomatoes. Melt the butter in a heavy saucepan. Add some chickpea flour. Stir and cook the flour on low heat for 2 to 3 minutes, without letting it burn. Pour in some cream. Stir to mix and bring to a simmer. Add the lime or lemon juice. Stir and serve with coriander as a garnish.
