Almond and Rose Kheer

Almond Rose Kheer is a luxurious and aromatic dessert that beautifully blends the rich creaminess of almonds with the delicate fragrance of rose. The smooth almond paste creates a velvety texture, while the cardamom and saffron add depth and warmth. Fresh rose petals not only enhance the presentation but also infuse a subtle floral note, making this kheer a truly indulgent treat.
For a Serving Size of Two:
Ingredients:
- 30 grams soaked and peeled almonds
- 250 ml milk
- 1 tablespoon rose water
- 2-3 fresh rose petals
- 1/2 teaspoon cardamom powder
- A pinch of saffron strands (optional, for colour)
Procedure:
- Soak the almonds in water for a few hours or overnight. Peel off the skin and grind them into a smooth paste using a little milk.
- In a saucepan, bring the milk to a gentle boil over medium heat.
- Stir in the almond paste and continue to cook, stirring continuously to avoid lumps.
Add the rose water, cardamom powder, and saffron strands to the mixture. Mix well. - If you prefer a slight natural sweetness, stir and cook for another 2-3 minutes.
Let the kheer simmer on low heat for 5-7 minutes until it thickens to your desired consistency. - Pour the kheer into serving bowls, garnish with fresh rose petals, and serve warm or chilled.
