Almond Kofta

Almond Kofta is a delicious and nutritious dish made from finely ground almonds and boiled potatoes, shaped into flavorful balls and served in a rich, aromatic gravy. This dish combines the nutty taste of almonds with a blend of spices, making it a satisfying and wholesome meal.
For a Serving Size of Two:
Ingredients:
- 100 grams almonds, blanched
- 1 medium potato (about 150 grams), boiled and mashed
- 1 tablespoon whole wheat flour (or chickpea flour for a gluten-free option)
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- Salt to taste
- 1 tablespoon fresh cilantro, chopped
- 1 tablespoon olive oil (for shallow frying)
- 1 tablespoon olive oil
- 1 medium onion (about 100 grams), finely chopped
- 1 teaspoon ginger-garlic paste
- 2 medium tomatoes (about 200 grams), pureed
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh cilantro for garnish
Procedure:
- Prepare the Kofta Mixture:
- In a food processor, pulse the blanched almonds until finely ground but not into a paste.
- In a mixing bowl, combine the ground almonds, mashed potato, whole wheat flour, cumin powder, coriander powder, turmeric powder, garam masala, salt, and chopped cilantro. Mix well until everything is combined.
- Shape the Kofta:
- Divide the mixture into small balls (about the size of a golf ball). Ensure they are tightly packed to hold their shape during cooking.
- Fry the Kofta:
- Heat olive oil in a pan over medium heat. Once hot, gently add the kofta balls and fry until they are golden brown on all sides. Remove and place them on a paper towel to drain excess oil.
- Prepare the Gravy:
- In the same pan, add more olive oil if needed. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown. Stir in the ginger-garlic paste and cook for another minute until fragrant.
- Add the tomato puree, coriander powder, turmeric powder, and salt. Cook until the oil starts to separate from the mixture.
- Add garam masala and stir well. If the gravy is too thick, you can add a little water to achieve the desired consistency.
- Combine and Serve:
- Gently add the fried kofta to the gravy and simmer for 5 minutes, allowing them to absorb the flavors.
- Garnish with fresh cilantro and serve hot with whole wheat naan, rice, or a salad.
